I love, love, love eggs for breakfast. Scrambled is probably my favorite. Add some salsa and avocado and I am in heaven. However, even the minimal amount of prep and clean-up involved in scrambled eggs wears on me. I know I can be really lazy about cooking… But, it is still really important to me to eat healthy. I refuse to grab for cereal or a muffin, because I know how little nutrition is in those foods, not to mention so little protein and healthy fats! I will feel off-balance all day if I start my day with simple carbs and sugar. So what’s a girl to do? Egg muffins!
Yes, still some prep and clean up, but if you do it right just once for the whole week! That even I can handle! ☺
Here is my favorite egg muffin recipe . . .
1 bunch spinach
¾ cup feta cheese
1 clove garlic
¼ tsp salt
2 tbsp Olive Oil
2 tbsp heavy whipping cream
2 tbsp butter or coconut oil
Preheat oven to 350 degrees. Sautee spinach with garlic and salt in olive oil until it is slightly tender. In a mixing bowl, whisk eggs with heavy whipping cream, then add feta cheese, and sautéed spinach, mix fully. Grease muffin pan with butter or coconut oil. Pour 1/3 cup mixture into each mold of a 12 mold muffin pan. Bake for 25-30 minutes.
